Perfect Winter Warmer


Last Sunday I realised that winter was here. I was totally oblivious to it as it was super mild up until then. I walked out of the gym, wearing my autumn parka with a pair of workout leggings and there it was, that wintry chill that was cutting through my clothes and biting my skin. That day I really needed a nice, comforting and super hot meal to warm up. As I was picking lots of seasonal veg from the farmers market I had an idea of this perfect hot bean and seitan chilli.


This recipe saved me that day. The heat and the spice of the chilli warmed me up within minutes. What was great, is I added just about every vegetable that I had in the basket as this meal is so versatile.


and here it is! Veggie and bean chilli 🌶served with my favourite turmeric quinoa!

I used all the veggies I had available at the house.

1. Fry onion and garlic in coconut oil 2. Add a cup of grated carrot and some water, vegetable stock cube, half a tsp of ground cumin, 1 tsp paprika and sliced red chilli. Cook for 5 to 10 mins. 3. Add rest of the vegetables (I added yellow and red pepper and halved mushrooms) add a dash of water if necessary. 4. Add red kidney beans and black beans (or other beans of your choice) 5. Add seitan (seitan is optional, I made mine yesterday so it was easy to cut it into cubes and pop it in) 6. Add chopped tomatoes and sweetcorn. 7. Add salt to taste and half a tsp of chilli powder (if your fresh chilli wasn't too strong!) 8. Add 3 tbsp of tomato puree (optional) 9. Thicken with some flour (optional) 10. Serve with rice, quinoa or on its own.
